Breakfast. Day at your disposal on the magical island of Santorini, designated by many as the Lost Continent of Atlantis. Be sure to visit any of the vineyards on the island.
Centuries of human labor are etched into the island's landscape and attest to the efforts of the local population to harden their land. The growing area begins at 300 meters above sea level and the vines reach sea level. The vintners built dry stone walls with pieces of petrified lava, in order to protect the soil from erosion caused by the strong winds that hit the island throughout the year, increase the cultivable surface and limit the loss of water to a minimum.
Every process applied to the soil (plowing, digging holes) aims to improve the absorption of precious winter rainwater. In summer, only the sea fog that covers the island cools the thirsty plants during the morning hours. Subsequently, the strong Etesian winds (“ meltemia ”) and the hot sun dry the grapes from moisture, preventing the risk of developing diseases such as mildew and botrytis. The only intervention necessary to protect the plants is sulfurization, which allows the principles of organic farming to be applied.
“ Ambelia ” To protect plants from strong winds and limit their need for water, Santorini winegrowers adapted and perfected a primitive pruning technique, the “ ambelia ” or “ kouloura ”. The plants are pruned to form a low vegetal basket where the grapes are protected and ripen, without risking being damaged by sand, which is blown by the wind.
